Every pig we serve is sourced for quality, smoked low and slow over real wood. Depending on the size, they can be in the smoker anywhere from 5-12hrs. When it’s time, our staff will carefully carve and serve the meat fresh for each guest, making sure every bite is as juicy as the first.
A personal recommendation from one of our best, is that the juiciest part is back in the haunches, the thickest part of the pig. It’s also where we take the temperature.
