As the last days of summer slip away, we’re giving the classic Paloma a bold, smoky upgrade. While you might be winding down from your summer adventures, this isn’t a drink for quiet reflection. Our Rocklands Smoked Paloma is an invigorating mix of zesty grapefruit and a whisper of smoke, all perfectly balanced with a spicy chamoy and Tajín rim. It’s the ideal way to savor the final, sun-soaked moments of August and toast to the memories of a great summer.

Rocklands Smoked Paloma
Combine:
- 2 oz. Smoked Tequila
- 1 oz. Grapefruit Juice
- 1 oz. Grapefruit Simple Syrup (equal parts grapefruit juice and sugar, heated until sugar dissolves, then cooled)
- 1 oz. Lime Juice
Top with:
- Seltzer Water
For the Rim:
- Chamoy sauce
- Tajín seasoning
- Garnish with lime wheel
Instructions:
Prepare the Rim: On a small plate, spread a thin layer of chamoy sauce. On another small plate, spread Tajín seasoning. Take your serving glass and carefully dip the rim first into the chamoy, ensuring an even coating, and then into the Tajín, coating the chamoy.
Combine Ingredients: In a cocktail shaker, combine the smoked tequila, grapefruit juice, grapefruit simple syrup, and lime juice.
Shake Well: Fill the shaker with ice and shake vigorously until well-chilled, about 15-20 seconds.
Strain: Strain the mixture into your prepared, rimmed glass without ice.
Top with Seltzer: Top the drink with seltzer water to your liking.
Garnish: Garnish with a fresh lime wheel.
The Rocklands Grapefruit and Smoke Mocktail Recipe
For those who prefer a non-alcoholic option, or simply want to enjoy the complex flavors without the spirits, here is a delightful mocktail version that captures the essence of our Smoked Paloma. We replace the tequila with a smoky tea to maintain that intriguing depth.
For the Mocktail:
• 2 oz. Smoky Tea (black tea or a similar smoky tea, brewed strong and cooled)
• 1 oz. Fresh Grapefruit Juice
• 1 oz. Grapefruit Simple Syrup
• 1 oz. Fresh Lime Juice
• Seltzer Water, to top
• Lime wheel, for garnish
For the Rim:
• Chamoy sauce
• Tajín seasoning
Instructions:
Prepare the Rim: On a small plate, spread a thin layer of chamoy sauce. On another small plate, spread Tajín seasoning. Take your serving glass and carefully dip the rim first into the chamoy, ensuring an even coating, and then into the Tajín, coating the chamoy.
Combine Ingredients: In a cocktail shaker, combine the cooled smoky tea infusion, grapefruit juice, grapefruit simple syrup, and lime juice.
