A sweet and savory summer treat!
Looking for a light and refreshing appetizer to impress your summer guests? Look no further than these Grilled Watermelon and Halloumi Skewers. The little pincho is easy-peasy simple and combines the sweetness of juicy watermelon with the salty savoriness of grilled halloumi cheese, creating a flavor explosion in every bite.
Ingredients:
- Seedless watermelon (about half)
- Block of halloumi cheese (8 oz)
- Toothpicks
- Olive oil (optional)
Finding Halloumi:
While you won’t find halloumi at every store, fret not! Here are some places to check:
- Selected Whole Foods Markets
- Wegmans
- Harris Teeter
- Some larger grocery stores
- Middle Eastern grocery stores, like Lebanese Taverna or Mediterranean Bakery
Grilling the Halloumi:
- Preheat your grill to high heat. Aim for a hot grill surface, not just hot coals, to get those perfect grill marks.
- Slice the halloumi cheese into ½ inch thick slices.
- Brush the halloumi slices lightly with olive oil (optional).
- Place the cheese slices on the hot grill and resist the urge to move them. Let them cook for about 2 minutes, then flip and cook for another 1-2 minutes, until golden brown with grill marks.
- While the cheese has been grilling, cut the watermelon into cubes, about 3/4 inch square.
- Remove the halloumi from the grill and cut into bite-sized cubes.
Assembling the Skewers:
- Thread a watermelon cube and a halloumi cube onto each toothpick, alternating for a visually appealing skewer.
