
A while ago we whipped up a couple of quick sauces for a television appearance. While Rocklands Original Barbeque Sauce takes time and lots of stirring to develop its tangy-sweet character, this mustard sauce is one you can assemble pretty fast.
Key Ingredient:
The mustard is key in here, so use one you really like. Classic (not too hot) dijon mustards, good old brown and yellow mustards — they are all good and very different from each other.
- Prep time: 15 minutes
- Serving size: 2.5 cups
Ingredients:
Makes: Enough for those July 4th vultures crowded around your grill
- 1 tablespoon butter
- 1 onion, chopped fine
- 1 clove garlic, minced
- 1 cup mustard
- ¾ cup brown sugar
- ¾ cup white vinegar
- 1 tablespoon hot sauce
- 1 teaspoon salt
- 1 teaspoon freshly ground black peper
Instructions:
- In a large saucepan, melt butter; add onions and sauté until soft, about 10 minutes.
- Add garlic, sauté for 1 more minute.
- Add mustard, brown sugar, vinegar, hot sauce, salt and pepper.
- Mix well.
- Bring to a boil; turn off heat.
Serving Suggestions:
- Brush the sauce generously on partially grilled fish, chicken, sausages, or vegetables.
- Serve extra sauce on the side for dipping.
Tips
- Experiment with different mustards to find your perfect flavor combination.
- You can also play with the vinegar: Try substituting a bit of balsamic vinegar for the white vinegar to add depth.
- Adjust the amount of hot sauce to your desired level of spiciness.
- Leftover sauce can be stored in an airtight container in the refrigerator for up to a week.
